Structure of Coffee Value Assessment: approaches, goals, and forms
Basics of working with Descriptive Form and Effective Form
Sensory calibration: how taste memory is formed
Tasting and analysis: practice with lots of different profiles
Group work: unifying terminology, feedback
DAY 2
Advanced practice: score comparison, case studies
Filling in assessment forms and data analysis
Consumer expectations and market relevance of flavor
Building a common language: eliminating subjective distortions
Preparation for the practical exam
PRACTICE
Two assessment forms:
"Descriptive Form" — for objective description of taste, aroma, texture
"Effective Form" — for evaluating consumer perception of coffee
Calibrated sessions: tasting coffees of various origins and qualities; analyzing flavors, textures, acidity, sweetness, aftertaste; exercises with reference products (fruits, nuts, cream, etc.) to build sensory references
Group work: comparing and discussing scores; refining descriptive language; constructive feedback
Exams
Practical exam: end of Day 2 (tasting and forms) Online exam: after the course on the SCA platform
To obtain the certificate, both exams must be passed (minimum score: 80%).
